FOODIE FRIDAY!

 Since we seem to be in cruise mode this week, we will stick with it for FOODIE FRIDAY as well!

This week we are going to take a look at our first meal on our Disney Wonder cruise in 2014.  

All I can say is YUMM!!!

FOODIE FRIDAY!! Brew-Wing, A New Booth at Food & Wine Festival!

 This is what the Epcot Food & Wine Festival has needed for years!  A wing place!!  

I just had to feature this location today as it's a place I would totally be going to and give it a try.

The menu and photos are below!  I hope this doesn't make you too hungry!  I purposely waited until after dinner on Thursday evening to write this.  ;-)

FOODIE FRIDAY! Disney's Brisket Mac n' Cheese!!

 I am always on the hunt for recipes from Disney parks to make at home.  This one sounds totally delicious, and I love Brisket Mc n' Cheese anyway, so this........ is a WIN-WIN!!

Recipe from A Touch of Disney at Disney California Adventure Park, Smokejumpers Grill.


Brisket Mac ‘n Cheese from Smokejumpers Grill at Disney California Adventure Park
Serves 6

PICKLED RED ONIONS

  • 1 red onion, thinly sliced
  • 1 cup white vinegar
  • 2 tablespoons sugar
  • 1 tablespoon coarse salt

CRISPY FRIED SHALLOTS

  • 1 tablespoon all-purpose flour
  • 1 tablespoon cornstarch
  • 1/2 teaspoon coarse salt
  • 1 shallot, thinly sliced
  • 1/2 cup canola oil, for frying

SMOKED BEEF BRISKET

  • 1 pound smoked beef brisket (see Cook’s Note below)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon coarse salt
  • 1/2 teaspoon black pepper

MAC ‘N CHEESE

  • 1 pound elbow macaroni 
  • Coarse salt, to taste
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup cream cheese
  • Black pepper, to taste

TOPPING

  • 1 cup favorite barbecue sauce

FOR PICKLED RED ONIONS:

  1. Place thinly sliced red onions in a mixing bowl. Combine white vinegar, sugar, and salt in a small saucepan. Bring to a simmer over medium-high heat. 
  2. Carefully pour over onions. Cool to room temperature. 
  3. Refrigerate until ready to serve. 

FOR FRIED SHALLOTS:

  1. Heat oil in frying pan until it reaches 350°F.
  2. Combine flour, cornstarch, and salt in a small bowl. 
  3. Dip shallots in cornstarch mixture and shake off excess coating. 
  4. Fry in hot oil for 1 minute, until crispy. 
  5. Drain on paper towels. Set aside.

FOR SMOKED BRISKET:

  1. Shred or chop smoked beef brisket. Season with garlic powder, onion powder, paprika, chili powder, salt, and pepper. 
  2. Heat a large skillet over medium heat for 5 minutes, until hot. Add brisket and cook for 3 minutes, until hot. 
  3. Keep warm until ready to serve. 

FOR MAC ‘N CHEESE:

  1. Cook macaroni in salted water, according to package instructions. Drain and set aside. 
  2. Melt butter in a Dutch oven over medium heat. Add flour and whisk until smooth and light brown in color. 
  3. Slowly add milk, whisking to break up any lumps that form. Whisk until milk begins to simmer. Reduce heat to low. Add shredded cheddar and cream cheese. Whisk until smooth. Stir in macaroni. Season with salt and pepper, to taste.
  4. Keep warm until ready to serve. 

TO SERVE:

Scoop mac ‘n cheese onto each plate. Add smoked brisket. Top with a drizzle of barbecue sauce, pickled red onions, and fried shallots. 

COOK’S NOTE: You can smoke your own brisket at home following directions for your particular smoker or simply pick up sliced smoked brisket from your favorite barbecue restaurant.

THROWBACK THURSDAY! August, 2015....the HOTTER THAN HOT TRIP!

 Since we are in the middle of July, I thought it would be fun to take a look at our August 2015 trip (same brutal temps for sure)......

I was down in Orlando for a work Expo for Kohl's and as I had done the year before, I stayed after to be at my Happy Place!  This time though, Paul flew down to be with me for a few days.  

At the time, I said I would never ever, not ever go to Walt Disney World again in August.  Well, that didn't really stand too long since I did wind up going again for the Annual Passholder Galaxy's Edge preview event in August of 2019.

FOODIE FRIDAY!!!!!!! Docking Bay 7 and Cargo Has New Menu Selections!

 

Foodie News: Menu Offerings at Star Wars: Galaxy’s Edge!!!!

And, such thrilling news it is when new food items come to a dining location at Walt Disney World!
News broke yesterday about some interesting selections at Docking Bay 7 and Cargo.

Docking Bay 7 Food and Cargoa designated location on Batuu for traveling food shuttles, just received a new food shipment! Starting today, Battuans and visitors to Star Wars: Galaxy’s Edge can sample Chef Strono “Cookie” Tuggs’ delicious new dishes inspired by his time on Takodana. 

  • Batuuan Beef & Crispy Topato Stir Fry – Smoky braised beef glazed in tamarind sauce served with stir-fried vegetables, crispy herb yucca, pickled onions, and cilantro.
  • Roasted Endorian Chicken Salad – Marinated chicken, mixed greens, grapes, tomato, cucumber, shaved onion, and radish in a lemon-pomegranate vinaigrette with spiced yogurt drizzle.
  • Pirjanad Hot Chicken Tip Yip – Crispy chicken glazed in a spicy chipotle sauce served with white rice, relish of sweet corn, shishito peppers, jicama, plantains, and cilantro
  • Peka Tuna Poke – Raw tuna tossed in a spicy Sriracha dressing served with green papaya salad, pickled mushrooms, fresh herbs, and crispy garlic.
